Peptones and meat derivatives are sources of carbon, nitrogen, vitamins and minerals. Yeast extract supplies B-complex vitamins which stimulate bacterial growth. Disodium-β-glycerophosphate buffers the medium as acid is produced from fermentation of lactose. Ascorbic acid stimulates growth of lactic streptococci.
