Liofilchem Cooked Meat Medium Culture Media 610372 is a Liofilchem microbiology product supplied by Kormay Biomedicals. Its practical role is cooked Meat Medium is used for the cultivation and maintenance of anaerobic organisms, especially pathogenic clostridia, differentiating saccharolytic from proteolytic species. This medium permits growth from a small inoculum, important for clinical specimens. It is also recommended in standard methods for food testing for the enumeration and identification of Clostridium perfringens.
This product is relevant to water and beverage laboratories where filtration, enrichment, colony recovery, and indicator-organism interpretation are tied to release or investigation decisions.

This product fits environmental monitoring where repeatable sampling and neutralization are more important than a single isolated result. The lab should connect the medium to surface type, disinfectant residues, incubation plan, alert/action limits, and trend review.
What to read after incubation
Turbidity of the medium indicates microbial growth. In the cultivation of clostridia, saccharolytic organisms usually produce acid and gas. Growth of proteolytic organisms is generally characterized by blackening and dissolution of the meat particles.
Selective or enrichment logic
Heart tissue granules and peptic digest of animal tissue provide amino acids, nitrogen, carbon, vitamins and minerals for organisms growth. Solid meat particles provide favorable growth conditions for anaerobes due to reducing action of sulfhyrdyl (-SH) groups of muscle protein. Sulfhydryl groups are more accessible in denatured proteins, therefore the meat particles are cooked for use in the medium. Dextrose is the fermentable carbohydrate. Sodium chloride maintains the osmotic balance of the medium.
Sample handling workflow
- Preparation: Dehydrated medium Place 1.25 g of the particles in a test tube and add 10 milliliters of distilled or deionized water. Sterilize in autoclave at 121°C for 15 minutes. Medium in tubes To obtain proper incubation conditions for growth of strict anaerobes, Cooked Meat Medium should be reduced prior to use by boiling the tubes for 10 min with caps loosened and cooling with tightened caps to room temperature before inoculation. Alternatively, an efficient and easy way to obtain suitable anaerobic conditions is through the use of the GasPak EZ anaerobic system (ref. 96726, 96724 or 96728).
- Procedure: Inoculate the tube in the area of meat particles (bottom of the tube) with isolate from a fresh subculture medium. Incubate anaerobically at 35 ± 2°C for up to 7 days.

Storage, hazards, and disposal
- Warnings / precautions: The product does not contain hazardous substances in concentrations exceeding the limits set by current legislation and therefore is not classified as dangerous. It is nevertheless recommended to consult the safety data sheet for its correct use. The product is intended for In vitro diagnostic use and must be used only by properly trained operators.
- Storage / shelf life: The powder is very hygroscopic, store the powder at 10-30°C, in a dry environment, in its original container tightly closed. Store tubes at 2-8°C away from light. Do not use the product beyond its expiry date on the label or if product shows any evidence of contamination or any sign of deterioration.
- Waste disposal: of waste must be carried out according to national and local regulations in force.
